Simple Basil Tea (From Roots and Refuge)
For anyone who watches, or wants to watch, YouTube videos on gardening and cooking what you have in your garden, Jessica Sowards of Roots and Refuge is probably one of the top people to follow. The following is her recipe for Basil Tea from her website.
Simple Basil Tea (Iced or Hot)
2 cups of basil leaves
7 cups of boiling water
3/4 cup of honey (or to taste)
1 tablespoon of lemon juice (or to taste)
Harvest basil leaves, about 2 cups packed, and place in a half-gallon mason jar or pitcher.
Boil 6-7 cups of water and pour over basil leaves. Let it steep for 20-30 minutes. The longer you let it steep, the stronger the flavor.
Strain basil leaves out of the tea.
While the tea is still warm, but not hot, add the honey and stir well to combine. Note - if you add immediately after you pour in the boiling water, it will cancel out the beneficial effects of the honey. If you wait until it cools completely, the honey will not dissolve into the liquid well.
Add lemon juice, taste, and add more honey or lemon as needed.
Store in the refrigerator for one or two weeks and enjoy over ice.
